The (Amazing!) Planetary Health Diet

Around Easy Light Sources, we say this a lot : The Earth has everything we need to be healthy and healed.

As human beings, we talk about ourselves a lot… And a majority of us see things from our perspective pretty much exclusively.

However, from the Earth’s perspective, the same quote applies to the health of Planet Earth.

Planet Earth has everything that it/she needs to be healthy and healed. But the practices and industries that human beings have created make it harder for the Earth to heal itself.

Things like factory farming and cutting down trees are violent energies that a lot of people have become desensitized to.

But those are the things that are destroying the Planet.

We all have a choice: help to heal the World OR stay on the same track that you’ve been on, eating the same unhealthy things that you’ve been eating forever and continuing to be addicted to it.

Whatever attachments people have to meat, sugar, and dairy – it doesn’t matter. The Earth is having a harder time to sustain itself as the violence to the Earth, ocean, and the atmosphere continues.

The word violence here is very appropriate. Anyone who thinks it’s too drastic to say that only perpetuates that desensitization is embedded in Earth culture.

Not meaning to get too fussy but it’s important to highlight the importance of giving caring energy to the Earth.

If you care at all about:

  1. The Health of Future Generations – (Not just the Earth that our children will inherit but the dietary habits as well. Childhood addiction to sugar is how you start your child down a path that is hard to break. And yes, meaty products are “tasty” but they’re also addicting. Teach babies that strawberries (and other fruits) taste good and they’ll be on a healthier path for life. Learn how to cook and season vegetables and it won’t be hard to eat them.)
  2. The Oceans – ( they are getting to hot and acidic and nautical habitats are dying. And over harvesting creating dead zones all over the natural world under the sea.)
  3. The Trees (Amazon Rainforests continue to be cut down for mass farming. And seriously, IS THERE ANY RAINFOREST LEFT AT THIS POINT?? Somebody go and take a picture because I need to see something.)
  4. The Planetary Water Supply (Harvesting animals uses sooo much fresh water. After all this time (70+ years), the Earth is having a hard time maintaining the balance. Especially with trees being torn down. Trees help to maintain balance on the surface of the Earth and below. Is the meat and dairy industry so dumb that they don’t understand the importance of trees, or do they just not care? The answer: they don’t care.)
  5. The Animals – (Everyone agrees that murder, rape, manipulation, and separating a mom and baby are terrible acts for someone to go through. But that happens to thousands of animals every day. Why is it okay to rape animals? That’s not fair. It happens all the time. Desensitization.)

Okay, this is Easy Light Sources so let’s lighten it up!

The good news? It’s EASY to help the environment!!!

You probably think I’m going to say GO VEGAN because of the mass amount of vegan propaganda but I’m not going there. I don’t even call myself a vegan.

Want to help Planet Earth? Stop eating so many animals and animal products. Stop consuming so much sugar, too! THAT’S IT.

In the case of sugar, make a choice to eat smaller amounts of it. Sugar is in almost everything and in high amounts. It takes effort to be healthy. But laziness has never been very rewarding anyway.

For meat, eat less of it. Make a conscious effort to take a day or a few days and just not eat animals. It’s really not that hard, ESPECIALLY WITH ALL THE VEGETARIAN MEAT AND CHEESE SUBSTITUTES OUT THERE.

Technically, cheese is already vegetarian but you know what I mean. Mother cows are raped for that extra sharp cheddar cheese, too.

It all comes down to better choices. Let’s do it for the Planet!

Kiwi Fruit

Now, here is a good source of vitamin C in a neat little package!

Green kiwis are most popular as they are sold year-round in grocery stores. Usually, the cost is very low as well. If they’re hard, don’t worry. They will soften on the countertop in a few days. But don’t wait too long or they will turn a little boozy. But if they’re not soft enough, it’ll be tart.

They’re ready to eat when you squeeze them and they give just a little.

Golden kiwi’s are more rare. They’re not available year round like the green ones.

The flavor of golden kiwi’s are sweet and the texture is smooth. The seeds are also smaller than the green ones.

Golden kiwi’s are also smaller in size and the outside is less fuzzy.

Perhaps every kiwi I’ve encountered is from New Zealand. That’s a long travel and it’s okay with me. My only hope is that no natural habitats are destroyed for their production.

McIntosh Apples

Apples are pretty well universally accepted as a solid fruit.

Physically, yes they’re solid. But, they’re also always available and come in an impressive amount of variety.

One bite of a McIntosh apple highlights what makes these stand out from the others. They’re really soft. So soft, they seem to be perfect for making applesauce. I wouldn’t recommend making a pie with them, lol.

The peeling is different as it can actually peel off the apple with your fingers.

Yes, they’re sweet and juicy too.

Some apples keep well for possibly weeks and weeks. McIntosh Apples do not. Only buy these apples when you anticipate the entire bag to be eaten within 1-3 days.

The soft flesh, I think, contributes to the ease of decay.

However, they are super delicious nonetheless.

Rome Apples

Homemade apple pie.

There are levels to the homemade-ness.

Fully homemade pie will have the crust made from scratch, the apples will be fresh and… I guess those are the main parts.

Over the Thanksgiving holiday weekend, I made a ~homemade apple pie. But the crust was Betty Crocker mix just-add-cold-water.

Warning: there is no final picture. Honestly, it was ugly and I didn’t think about taking a picture. It didn’t taste that great either; it was a bit dry.

Interestingly enough, the weekend prior I had also made an apple pie and that pie, made the same way, was perfect in every way. Amazing.

But this one, was not. Idk why. We certainly can’t blame the apples, THEY were perfect.

About 7 Rome apples were washed and chopped as seen above.

Rome apples are really crisp and sweet and juicy!

Then I cooked them on the stove. Not fully cooked. They still had some bite but they were not raw any longer.

What they were was very fragrant and flavorful. The addition of cinnamon and nutmeg helped with that πŸ™‚ also added cane sugar and water and a pinch sea salt. Also stirred in some flour after they were removed from the heat.

Something really interesting was the color of the pie afterward. I think the red pigment in the peels seeped into the filling because it was red inside. So red that people asked me, “What is it?”

It did look odd and so I wasn’t too offended… And then everyone ate the pie so maybe I’m the only one who thought it to be sub-par.

Rome apples, though, are great. I’d class them with HoneyCrisp apples, perfect for eating when you want something healthy.

However, they don’t keep well long l-term like other apples do. So, eat your apples! Or juice them. But eat them so you can get some fiber too!

I guess the next questions can include just how many varieties of apples are out there? Let me see how many I can name without searching:

  1. Rome apples
  2. Macintosh apples
  3. Granny Smith apples
  4. Red Delicious apples
  5. Pink lady apples
  6. Jazz apples
  7. HoneyCrisp apples
  8. Green apples
  9. Crab apples

9, not bad! #10 was Chinese apples but those are actually pomegranates and those are totally different!

It would be great to do a thing for pomegranates but I personally have questions about if the fruit is worth the effort. Conversation for another day.

Dried Fruit Candy from 7-Eleven

One day I’m going to do an entire 7-Eleven appreciation post. I love that damn store. But I’m a realist and I don’t love everything they do.

Like this sweetened, dried fruit medley:

Let’s get this part out of the way right now: Yes, it is tasty!

But there are also 17 grams of sugar. Sugar is not good for us. But it’s addicting, and tasty, and stimulates that part in the brain that says “ahhh yess. Just one more.”

Sugar is in most of the foods available in the store. When I’m seen in the store, the number one thing I check the nutrition label for is … the sugar content.

Most of the time, after checking it, the product is back on the shelf before I think to check if there is milk or gelatin in it. That’s because the astronomical amount of sugar added literally stops me in my tracks.

One more thing about sugar grams, (& I’ll get back on topic track ASAP) but notice on the nutrition labels they don’t tell us how much of the daily value we’re consuming. That’s because we’d all be dismayed to discover we ate 2 fancy donuts and it put us over the daily limit.

So there are a couple things we need to discuss.

We can look and say “17 grams, that’s not bad.” But before it’s officially “not bad,” take a look at the top where the serving size is indicated.

There are 4.5 servings in one bag.

If someone were to enjoy one serving a day, this should last the entire work week.

But, sadly, and yes it is sad, this decent sized bag probably wouldn’t last more than 3 days.

The honest truth is that consuming an entire bag of these would supply your body with over 70 grams of sugar.

That’s just crazy. Especially because this is a snack food and you are pretty much guaranteed to be eating more food with added sugar later on.

Many people may be fooled into thinking these are healthy when it’s just as bad as a Snickers bar.

Now, what about the sugar that occurs naturally in fruit? How much of the 17 sugar grams comes from fruit? I would really like to know.

However, as the amazing resource that 7-Eleven is, they do have much healthier dried fruit options that do not have added sugar πŸ’› I’ve seen mango and pineapple so far! However, before we switch food products, I have one more bone to pick with these:

Look at that green fruit in the package preview window. Now, scroll back up and look at the ingredients. If that’s too much, I’ll jump right to the point:

There are no green fruits in the ingredients:

Pineapple & star fruit are yellow 🍍

Papaya & mango are orange (and sooooo deliciousπŸ˜‹)

Cantaloupe is also orange, but there’s a loophole here as there is a green variety of cantaloupe. But it’s usually called by its name, Honeydew melon. And also, it’s fruity parts are light green.

The added yellow #5 and blue #1 make the color green. Oh no, artificial ingredients.

Look, enjoy this as a snack if you must. Consider it real fruit candy But keep in mind a real serving is like 5/6 pieces.

The 100% natural, no sugar added dried fruit is different.

We can tell that this one doesn’t have much added to it. On the package they say the whole pineapple was dried, then they sliced and packaged it.

It tastes good but it’s not pretty. That is, if you want a vibrant yellow pineapple ring, it does not look like that.

Of course, it is still beautiful in its own way.

The sugar content of these claims to be 14g per package. At least we know with this, the sugar comes from the fruit.
